Smoked Salmon Won-tons & Honey-ginger Sauce

  • 1 cup Balsamic vinegar
  • 1/4 cup Vegetable oil
  • 20 Won-ton wrappers, 3 1/2 inch square
  • 1 large Egg, beaten
  • 8 ounces Smoked salmon
  • 1/2 cup Water
  • Garnish Pickled ginger or julienned chutney
  • 1 cup Orange juice, fresh
  • 2 tablespoons Shallots, minced
  • 1/3 cup Honey
  • 1/2 teaspoon Chinese five-spice powder
  • 2 tablespoons Hoisin sauce
  • 1 pinch Cayenne pepper
  • 2 tablespoons Soy sauce
  • 1 small Lime; zest and juice
  • 1 tablespoon Ginger, fresh, grated
  • 2 teaspoons Cornstarch, mixed with cold water to
  • ~ Resemble cream
  • SMOKED SALMON WON-TONS: in a small saucepan bring the vinegar to a boil and reduce to 1/3 cup. Set aside to cool (some of this syrup will be used as a garnish). Separate the salmon into 20 equal pieces. Lay out 5 won-ton wrapers and brush each lightly with the egg. Put 1/4 teaspoon balsamic syrup on each and top with a portion of salmon and 2 to 3 shreds ofginger. To close won-tons, pinch the opposite corners together, then bring the remaining folds together and pinch. Continue until 20 won-tons are assembled. Tocook the won-tons, choose a skillet that is large enough to hold all the won-tons and has a cover. Over medium heat, add the oil and saute the won-tons until they are slightly brown on the bottoms. Add the water and cover to steam until tender, about 3 to 5 minutes. To serve, pour ginger sauce in the center of 4 plates. Place 5 won-tons on each place. Garnish with chutney and additional balsamic syrup.

    Makes 4 servings.

    HONEY-GINGER SAUCE: In a saucepan combine the orange juice, honey, soy sauce, hoisin sauce, lime zest and juice, ginger, shallots, five-spice powder and cayenne pepper. Heat mixture over medium-high heat until it reaches a simmer. Add cornstarch mixture and bring to a boil. Remove from heat andset the sauce aside until it cools to room temperature.

    Makes 1 cup.

    NOTE: Chinese five-spice powder can be found in the spice section or Asian food section ofmost supermarkets. Won-ton wrappers andpickled ginger can be found in Asian markets and many supermarkets in the produce or foreign food sections. Pickled ginger comes thinly sliced in jars.
