Overlook Cafe Beef Macaroni Soup

  • 1 pound Ground beef
  • 2 tablespoons Vegetable oil
  • 1 medium Onion, diced
  • 2 cups Celery, chopped
  • 1/3 cup Red wine
  • 2 cups Tomato puree or tomato sauce
  • 1 cup Tomatoes, fresh, diced
  • ~ Salt and ground black pepper
  • 1 cup Elbow macaroni, uncooked
  • 3 cans 14 1/2-ounce can beef broth
  • ~ (or use beef base for 6 cups of water)
  • Fry ground beef, drain any grease and remove ground beef from pan. Add oil and saute onion and celery until translucent; add wine, tomato puree and fresh tomatoes, and simmer 30 minutes. Add slat andpepper to taste.

    Cook macaroni until tender in boiling water and drain well. Add ground beef, drained macaroni and broth to tomato mixture and simmer until heated through.

    Makes 8 to 10 servings.
