Angela's Mouth-watering Mediterranean Chicken

  • 5-10 Garlic cloves, thum sized
  • 4 tablespoons Olive oil, extra-virgin
  • 2 Chickens, cut up (or 8 chicken breasts)
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Oregano, dried
  • 1 teaspoon Rosemary, dried
  • 1 1/2 cups Dry white wine
  • ~ Salt and pepper to taste
  • ~ Juice of 1 lemon
  • Peel garlic and smash cloves with the flat of a knife blade; chop cloves into quarters. Heat oil in a deep heavy skillet or dutch oven, large enough to take all the chicken. Add chicken, garlic, and herbs and cook briskly for 7 minutes, turning the chicken to brown it lightly all over. Pour in wine, bring to a full boil, and turn down to simmer.

    Add herbs, cover, and let cook for 45-60 minutes until done, turning the chicken pieces once. Chicken should be tender and the sauce glaze-like. Sprinkle lemon juice over chicken. Serve with a green salad, saffron rice, and sauteed mushrooms.
