Mom's Spinach Lasagne
Cook and drain noodles, cool and toss with olive oil. Mix together cottage cheese, beaten egg, 1tbsp. olive oil, parmesan, and salt and pepper. Prepare spinach: Remove stems, wash and dry, chop coursely. Add spinach to cheese mix. Prepare to assemble lasagne in a 13x9 inch baking dish. Layer the ingredients in the following order: 1. 1 cup spagetti sauce, enough to thinly cover the bottom, 2. Four cooked noodles side by side, 3. Thin layer of spinach and cheese mix, 4. Four more noodles. Continue layering until the pan is full, cover top in grated mozzerella. Bake covered for 35 min. at 350°.Let cool to set before serving.
