Candy Cucumber Rings
FIRST DAY: Soak cucumbers overnight in 2 cups lime and 8 1/2 qts. water.
SECONDDAY: Wash in cold water, let soak in ice water for 3 hrs. Drain well. Simmer 2 hrs. in 1 cup vinager, 1 Tablespoon of alum, food color, with enough water to cover.
Drain well and throw away. Make andheat syrup 2 cups vinegar, 2 cups water, 7 cups of sugar, 8 sticks cinnamon, 3/4 cup red hot candy. Pour over rings letstand 24 hrs.
THIRD DAY: drain off syrup add 1 cup of sugar, reheat and pour over rings.
FOURTH DAY: Same as above.
FIFTH DAY: Drain off syrup and add 1 cup ofsugar. Pack cucumbers in jars, cover with hot syrup. Put rings and seals on, tighten.
