Potato Pancakes

  • 2 Eggs, beaten
  • 1/4 cup Milk
  • 2 cups Potatos, Grated
  • 1 tablespoons Onions, minced
  • 3 tablespoons Flour
  • 1 teaspoon Salt
  • ~ Pepper
  • Combine eggs and milk in mixing bowl. Grate potatos and add to egg mix imediately, just the potato, not any juice. Mix in remaining ingredients. Drop by spoonful into a lightly greased skillet. Stir mix each time before adding more to skillet. Cook slowly until they are well browned, turn and cook the other side. Makes 18 3 inch pancakes.
