Apricot Bars
Rinse apricots, cover with water, boil for ten minutes,drain, cool and chop. Mix butter, sugar and 1 cup of the flour until mix resembles crumbs, pack into an 8 inch square pan. Bake at 350 for about10 to 15 minutes, until golden brown. Sift remaining flour, baking powder and salt together. Beat the brown sugar into the eggs. Stir in the flour mix, walnuts, apricots and brandy flavoring. Spread over the baked layer and return to the oven for 30 minutes. Cool in pan, cut into squares.
