Quince And Pineapple Honey

  • 5 large Quinces
  • 1 pint Water
  • 1 large Pineapples
  • 6 pounds Sugar
  • Wipe quinces well Core, but do not peel.

    Peel and put through the mincer the pineapple, also the quinces.

    Have a basin underneath to catch the juice.

    Meanwhileput on to boil the pint of water and the sugar.

    Boil hard for 10 minutes, then put in the minced fruit and continue boiling for 30 - 45 minutes, when it shouldbe right thickness and a lovely golden colour.
