Snowballs

  • 2 ounces Butter
  • 1/4 pound Castor sugar
  • 1 Eggs, beaten
  • 1/2 Orange rind, grated
  • 1/4 pound Flour, sifted
  • 1 teaspoons Baking powder
  • Pinch of Salt
  • 2 1/2 tablespoons Orange juice
  • 1 teaspoon Lemon juice
  • ~ Lemon glaze icing
  • ~ Coconut, desiccated
  • 2 1/2 tablespoons Water, cold
  • Beat fat until soft.

    Gradually beat in sugar.

    Beat until fluffy.

    Beat in egg and orange rind.

    Sift remaining dry ingredients three times.

    Add alternately with juices and cold water to the creamed mixture.

    Three quarters fill small greased patty tins.

    Bake in a moderately hot oven for about 15 minutes.

    Turn out on to arack.

    When cold, smear snowballs thinlyover top and sides with lemon glaze icing.

    When icing is nearly dry roll, snowballs in coconut.

    To make lemon glaze icing:- Moisten quarter pound sifted icing sugar with tepid water to make spreadable consistency. Flavour the icing with a drop or two of lemon essence.
