Pineapple Pudding

  • 2 ounces Butter
  • 2 ounces Sugar
  • 2 ounces Flour
  • 2 Eggs
  • 2 teacups Milk
  • 1 tin Pineapple chunks
  • Put the pineapple cut into small piecesinto a pie dish.

    Mix the egg yolks withthe sugar and the pineapple juice.

    Meltthe butter in a sauce and add the flourgradually then the milk.

    Boil for 3 minutes stirring all the time.

    Add the sugar, juice and yolks.

    Cook gently until itthickens, pour over the pineapple.

    Put the pudding in the oven and heat through.

    With the remaining egg whites make a meringue with 1 tablespoon of sugar.

    Pourthe meringue on top of pie and place back in oven to brown the meringue.
