Potato Nests

  • ~ Cooked Mashed Potato
  • 1 per person Egg
  • Fresh or tinned cooked Peas
  • ~ Parsley for garnish
  • Pipe some creamy mash potato on top of a greased baking sheet to form "nests"; glaze with beaten egg and break an egg in half of the number of nests, leaving the others empty.

    Bake in a moderate ovenuntil the eggs have set.

    Fill the othernests with freshly cooked peas and garnish with parsley.
