Shortbread Creams

  • 1/4 pound Butter
  • 1/2 cup Sugar
  • 1 Eggs, beaten
  • 2 tablespoons Milk
  • 1/2 pound Wholemeal SR Flour
  • Pinch of Salt
  • 1 teaspoon Orange rind, grated
  • 1 tablespoon Icing Sugar
  • 1 tablespoon Butter
  • 1 tablespoon Orange juice
  • Cream butter (or lard) and sugar, add beaten egg with milk and stir into wholemeal SR flour, mix with salt and orange rind.

    Put teaspoonfuls on a tray and bakeuntil brown and crisp.

    When cold put together with this filling: - cream icing sugar and butter and orange juice.
