Roast Beef Platter

  • 1 pound Roast beef, cold
  • 1/4 cup Onions, chopped
  • 1/4 cup Gherkin, chopped
  • 1 tablespoon Potatoes, cooked, chopped
  • 1/2 cup Salad oil
  • 1/2 cup Vinegar
  • 2 Eggs, hard-boiled
  • 1/2 cup Beetroot, sliced
  • ~ Salt and pepper to taste
  • ~ Lettuce
  • Slice roast beef into 1/4 inch strips. In a bowl combine beef, onion, gherkins,and potatoes. In a jar shake together salt, pepper, vinegar and oil.

    Pour a little over sliced beetroot.

    Pour remainderover beef mixture, toss lightly.

    Chill meat and beets until well chilled.

    To serve , arrange salad on a bed of lettuce and garnish four corners with the slicedbeetroot and sliced eggs. .
