Roast Beef Platter
Slice roast beef into 1/4 inch strips. In a bowl combine beef, onion, gherkins,and potatoes. In a jar shake together salt, pepper, vinegar and oil.
Pour a little over sliced beetroot.
Pour remainderover beef mixture, toss lightly.
Chill meat and beets until well chilled.
To serve , arrange salad on a bed of lettuce and garnish four corners with the slicedbeetroot and sliced eggs. .
