Strawberry Meringue

  • 1 small cup Cornflour
  • 2 tablespoons Sugar
  • 1 dessertspoon Butter
  • 3 cups Milk
  • 2 Eggs
  • 1 cup Strawberries, fresh
  • Bring most of the milk to a boil, mix cornflour smooth with remainder and add to boiling milk, stirring all the time.

    Add butter and sugar, boil for 5 minutes,allow to cool and add egg yolks.

    Put some of the mixture in a buttered pie dish, add strawberries, sprinkle thickly with sugar; add the rest of the mixture.

    Whip egg whites stiff with flavouring and sugar, spread on top and brown in a gentle oven.
