Baked Potato Soup

  • 4 Large Baking potatos
  • 2/3 cup Butter or margarine
  • 2/3 cup Flour, all-purpose
  • 3/4 teaspoon Salt
  • 1/4 teaspoon White pepper
  • 6 cups Milk
  • 1 cup (8oz) Sour cream
  • 1/4 cups Green onions - thinly sliced
  • 10 slices Bacon, crisp, chopped
  • 1 pounds Cheddar cheese, mild, shredded
  • Bake potatoes at 350° for 65-75 minutesor until tender; cook completely. Peel and cube potatoes. In large saucepan melt butter, stir in flour, salt and pepperuntil smooth. Gradually add milk. Bringto a boil; cook and stir for 2 minutes or until thickened. Remove from heat; whisk in sour cream. Add potatoes and green onions. Garish with bacon and cheese.

    Yields: 10 servings.
