Peach Blossom Cake

  • 1 cup SR flour
  • 1 heaped tablespoon Butter
  • 1/2 small cup Sugar
  • 2 tablespoons Jelly crystals, raspberry
  • 1 Egg
  • 1/4 cup Water, lukewarm
  • 1/2 teaspoon Raspberry essence
  • Pinch of Salt

    • Cream butter and sugar well.

    Add beatenegg and essence.

    Sift in dry ingredients and sprinkle with jelly crystals.

    Add water, mix thoroughly.

    Bake in a moderate oven for 25 - 30 minutes.

    Ice with white icing and sprinkle with red jelly crystals.

    Orange, pineapple or lemon jelly crystals may be used instead of raspberry.
