Tuna With Orange
Melt the butter over a low heat, add flour and blend.
Add 2 teaspoons orange rind, lemon rind, sherry, milk and salt.
Cook sauce over a low heat for 5 minutes,stirring continuously.
Break tuna into large pieces and add to sauce; cook for a further 5 minutes, stirring constantly.
Add remaining orange rind to rice and toss lightly.
Serve tuna sauce over ricemixture.
