Baked Cloves And Potatoes

  • 1 pound small White or red potatoes
  • 10 Garlic cloves
  • 1/4 cup Olive oil
  • 2 tablespoons Fresh parsley, chopped
  • ~ Salt and pepper to taste
  • ~ Butter or margarine
  • Wash and dry potatoes. Toss potatoes and garlic cloves with oil, herbs, salt and pepper until well coated. Arrange a baking dish in single layer. Bake, uncovered, in 450 degree oven for 25 minutes. Turn potatoes, then bake another 25 minutes uncovered or until potatoes and cloves are soft. Cut potatoes open, spread with mashed cloves, and dot with butter ormargarine if desired. Serves 4 to 6.
