Potato Scramble

  • 3 rashes Bacon
  • 3 medium Potatos, boiled
  • 1 white Onions, chopped
  • 4 small Eggs
  • ~ Salt and pepper to taste
  • ~ Parsley or chives
  • Cut rind from bacon, chop rashes into small pieces.

    Put with rinds in pan to sauté until cooked and crisp.

    Remove rindsand add dices potatoes and onion.

    Cook until lightly browned, keeping from sticking to open by adding a little butter if necessary.

    Beat eggs with salt and pepper, pour over potatoes, shake over heatuntil eggs set. Stirring only when necessary.

    Serve topped with a little chopped parley or chives. Stiring only when necessary.
