Soup Noodles

  • ~ Egg whites
  • ~ Salt
  • ~ Plain flour
  • Noodles make a nourishing addition to soup.

    Mix an unbeaten egg and a little salt in enough plain flour to make a good paste, roll out wafer thin and dry on pasteboard, which must be very well floured.

    When dry but pliable roll up as if a pancake, the with a knife shred thinly.

    Drop into soup a few minutes before serving they are delicious.
