Custard and Pudding, Rice Dishes

Rice Apple Charlotte

  • 1 cup Rice, uncooked
  • 2 cups Milk
  • 2 Eggs, beaten
  • 1 tablespoon Raisins, chopped
  • 2 Apples, green
  • 1 dessertspoon Sugar
  • Juice of 1/2 Oranges
  • ~ Bread crumbs
  • To drained rice add milk, beaten eggs, chopped raisins, sugar (if desired).

    Putin a pie dish and bake slowly for 30 minutes.

    Meanwhile, peel and slice apples and stew in a little water and sugar.

    Top pudding when set with apples, cover with breadcrumbs and dabs of butter a nd pour orange juice over breadcrumbs.

    Bake quickly to brown topping.

    Serves 4
