Cakes and Frostings

Cupcakes By Claudeen

  • 1 Cup Softened cream cheese
  • 1 Egg
  • 1 1/3 Cup Sugar
  • 1/8 tsp Salt
  • 1 6oz. pkg, Chocolate chips
  • 1/4 Cup Nuts
  • 1 1/2 Cup Flour
  • 1/2 Cup Cocoa
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 Cup Butter
  • 1/3 Cup Vegetable oil
  • 1 Tbsp. Vinegar
  • 1 tsp. Vanilla
  • Combine cream cheese, egg, sugar and 1 tsp. salt. Beat well. Stir in chocolate chips and nuts. Set aside Sift in mixingbowl: flour, sugar, cocoa, baking soda,1 tsp. salt. Add water, oil, vinegar and vanilla. Beat until mixed.

    Fill cupcake papers 1/3 full with chocolate batter.Drop heaping teaspoon of cream cheese mixture into chocolate mixture.

    Bake at 350° for 20 to 30 minutes.
