Scotch Shortbread

  • 8 ounces Butter
  • 10 ounces Plain flour
  • 2 ounces Castor sugar
  • 1 ounce Rice flour
  • Mix together the rice flour and plain flour and rub in the butter using the tips of your fingers.

    Add castor sugar and continue rubbing until the mixture is a smooth dough.

    Knead slightly.

    Form in 2 large cakes or 2 rounds to be marked with the back of a knife, or form in a longsausage shape, refrigerate, the cut theshortbread into slices.

    Bake in a cool oven (325 degrees) for 18 to 20 minutes,until a pale golden colour.
