Scotch Shortbread
Mix together the rice flour and plain flour and rub in the butter using the tips of your fingers.
Add castor sugar and continue rubbing until the mixture is a smooth dough.
Knead slightly.
Form in 2 large cakes or 2 rounds to be marked with the back of a knife, or form in a longsausage shape, refrigerate, the cut theshortbread into slices.
Bake in a cool oven (325 degrees) for 18 to 20 minutes,until a pale golden colour.
