Grilled Chicken With Southwestern Rub

  • 1 tablespoon Paprika
  • 1 tablespoon Powdered garlic
  • 1 tablespoon Dried rosemary
  • 1 tablespoon Dried thyme
  • 3-4 pounds Chicken pieces
  • 3-4 pounds chicken pieces, preferably leg-thigh pieces with the thigh bone removed, and boneless breasts with the wing bone attached 1. Make the rub: In a small bowl stir together the paprika, powdered garlic, rosemary, and thyme.

    2. Smearthe rub over the chicken pieces and refrigerate for at least 2 hours or overnight.

    3. Preheat the grill. Grill the chicken over direct heat until lightly browned on both sides. Move the pieces over indirect heat, close the grill, and cook for about 45 minutes, or until chicken is done.
