Caramel Sauce
Combine sugar, water and lemon juice ina pan and bring to boil. Use a pasty brush dipped in water to wash mixture fromside of pan to avoid crystallization.
Cook until mixture becomes golden in color. Remove from heat and slowly whisk in cream, then butter. If lumps appear, return to heat until dissolved. Strain and serve over ice cream.
