BBQ Salmon With Caper Vinaigrette

  • 1/2 cups Olive oil
  • 1 tablespoons Tarragon, fresh, chopped or dry
  • 2 tablespoons Lemon juice
  • 1 tablespoons Sugar
  • 1 teaspoons Dijon mustard
  • 2 tablespoons Capers, chopped
  • Pinches Black pepper, coarsely ground
  • 2 Salmon fillets
  • Mix ingredients and marinate salmon fillets for 1/2 hour. Light BBQ and baste with marinade. Save 1/2 for drizzling at the table. Garnish with lemons and freshtarragon.

    Serve with basmati rice friedin olive oil with pearl onions & salad of sliced tomato, zucchini and sun-driedfeta drizzled with extra virgin olive oil.
