Cakes and Frostings

Eddy's Carrot Cake

  • 2 cups Sugar
  • 1 1/2 cups Oil
  • 3 cups Carrots, grated
  • 1/2 cup Nuts, chopped
  • 4 Eggs
  • 2 cups Flour
  • 2 teaspoons Baking soda
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Salt
  • FROSTING: ~
  • 1 large Cream cheese
  • 1 cube Butter or margarine
  • 1 pound Powder sugar
  • 2 teaspoons Vanilla
  • 1 cup Nuts, chopped
  • Mix cake ingredients altogether. Bake at 325º for 50-60 minutes.

    Mix frosting ingredients altogether and frost a cool cake.
