Applesauce Muffins

  • 1 cup Butter
  • 2 cups Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 2 cups Applesauce
  • 4 cups Flour
  • 2 teaspoons Baking soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Allspice
  • 1/2 teaspoon Ground cloves
  • 1 cup Walnuts, chopped
  • In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture.Fold in nuts. Fill greased or paper-lined muffin cups 3/4 full.

    Bake at 350º for 25 minutes or until muffins test done.Sprinkle with cinnamon and sugar if desired.

    Yield 2 dozen.
