Rhubarb Cake

  • 1 1/2 cups Sugar
  • 1/2 cup Shortening
  • 1 Egg
  • 1/4 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 2 cups Flour -sifted
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking soda
  • 1 cup Buttermilk or sour milk
  • 2 cups Rhubarb - cut up
  • 1 teaspoon Vanilla
  • 1/2 cup Walnuts, chopped
  • 1/4 cup Sugar
  • 1/2 teaspoon Cinnamon
  • Cream together the first 5 ingredients.Add the next three ingredients. Mix together. then add buttermilk or sour milk.Next stir in rhubarb, vanilla and nuts.Place in a 9x 13 glass baking pan. Mix 1/4 cup sugar and cinnamon together and sprinkle on top. Bake at 350° for 50 minutes.
