Peanut Brittle (Microwave)

  • 1 cup Sugar
  • 1/2 cup Karo syrup, light
  • Dash of Salt
  • 1 to 1 1/2 cups Peanuts, raw
  • 1 tablespoons Butter or margarine
  • 1 1/2 teaspoons Baking soda
  • 1 teaspoon Vanilla
  • Grease baking sheet heavily. 1.) Combine sugar, corn syrup and salt in 3 qt casserol dish or bowl. Stir in peanuts. Microwave on High until light brown 8 -10 minutes, stirring once or twice. (I cook for 4 1/2 minutes- stir, then 4 1/2 minutes again) 2.) Stir in remaining ingredients until light and foamy. Quickly spread on greased baking sheet. Spread as thin as possible for brittle candy. Cool; break into pieces.
