Whoopie Pies

  • 1 Egg
  • 1/2 cup Shortening
  • 1 1/4 cup Sugar, granulated
  • 1 cup Milk
  • 1 teaspoon Vanilla
  • 2 1/3 cups Flour, all-purpose, unbleached
  • 1/2 cup Cocoa
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking powder, double-acting
  • 2 cups Marshmellow cream
  • 1 cup Shortening
  • 1/2 cup Sugar.powdered
  • 1/2 teaspoon Vanilla
  • 1/8 teaspoons Salt
  • 2 teaspoons Water, very hot
  • Pre-heat oven to 400º. In a medium bowl, blend together the egg, shortening and sugar with electric mixer. Continue beating while adding milk and vanilla. In another bowl sift together the dry ingredients.

    Combine the dry with the wet ingredients and beat until smooth. Spoonabout 1T batter in a circle or 4" stripand 1" wide on a lightly greased cookiesheet. Bake for 5-6 minutes or until cakes are done. Cool.

    In a bowl combinemarshmellow creme, shortening,powdered sugar and vanilla. Dissolve the salt into the water, add to creme mixture and beat on high spped with electric mixer until creme is smooth and fluffy.

    When cakes are cool, spread about 1T of filling on the face of one cake and top with another cake. Repeat until all cakes are done.
