Sizzling Rice
Wash the rice well. Put in a pan with the 2 cups of water and bring to a boil. Boil uncovered for 10 minutes and simmer20 minutes covered tightly. Put the rice in a long rectangular metal pan and bake uncovered for 30 to 40 minutes. The rice will be dry enough to be removed from the pan and broken into squares. Heat the oil for deep frying to a medium heatand fry the rice cakes until they are golden.
Serve immediately.
Yield: 6 servings.
