All-bran Muffins

  • 1 Cup Flour
  • 1 Cup All-Bran
  • 1 Cup Milk
  • 3 Tbsp. Cooking oil
  • 3 Tbsp. Baking powder
  • 1/2 Cup Sugar
  • 1 Tsp. Salt
  • 2 Eggs
  • 1 Cu English Walnuts
  • Sift flour, baking powder, salt and sugar. Set Aside. Place All-Bran cereal andmilk in a bowl. Stir to combine. Let stand 5 or more minutes. Add eggs and oil,beat well. Then add sifted ingredients;combine well. Add English walnuts. Mix again. Makes 16 muffins or bake 8 and cook the rest in a skillet. Bake 15 or 20 minutes in a 400° oven. If you want cornbread, omit All-Bran and add same amount of corn meal.
