Mexican - Spanish, Rice Dishes

Mexican Fried Rice

  • 3 tablespoons Cooking oil
  • 1 cup Rice,long grain brown
  • 8 ounces Shrimp,popcorn
  • 1 cup Chili salsa
  • 1/2 cup Green pepper, diced
  • 1 small Onions, chopped
  • 1 clove Garlic, minced
  • 2 cups Water
  • In a 12" skillet, heat oil. Add rice; cook until golden brown, stirring frequently. Stir in remaining ingredients and 2cups water. Bring to a boil, reduce heat, cover and simmer 15 to 20 minutes or until rice is tender. Season to taste: serve additional salsa if desired.

    NOTE:I don't care for the shrimp in this recipe and it is wonderful without. But feel free- this is one of those "add whatever you want" recipes. *
