Buttermilk Biscuits

  • 2 cups Flour, self-rising
  • 1/4 teaspoons Baking soda
  • 1/3 cups Lard
  • 1 teaspoons Baking powder
  • 1 cups Buttermilk
  • Preheat oven to 450° Put flour,baking soda, baking powder in med. bowl. Cut in lard, till size of peas. Your can use your hands or a pastry cutter. Add buttermilk.Mix till all blended. Put on flouredcounter or board with flour.Knead untilthe dough isn't sticky, but not too stiff.not too long, longer you knead the tougher the biscuits will be, you want them tender and fluffly.About 5-6 times should do it You can pinch these off or roll and cut with cutter, or glass.

    If using all-purpose flour, use 1 tablespoon ofbaking powder, 1/2 teaspoon of salt.

    Put on lightly greased cookie sheet, Bake for 20 minuntes, should be nice and golden brown.

    You may use crisco, but the lard gives them that old time flavor.
