Wild Turkey

  • 1 teaspoons Salt and pepper
  • 1/2 pounds Jowl bacon, or salt pork sliced
  • 1 Wild turkey, skined or unskined
  • 2 cups Water
  • Preheat oven to 350° Rub salt and pepper on turkey, place bacon or salt pork ontop of turkey breast.

    Wrap turkey in heavy duty foil sprayed with non-stick spary. Put in a roaster, add water, Keep checking to make sure the pan doesn't go dry.

    Bake for 2-4 hours depending on size.

    Roll back foil if not skinned and remove bacon and brown. Remove turkey and use broth for gravy.

    I usually cool, remove from bone,cut into pieces. Make favorite dressing recipe, add turkey, put in 9x13 pan sprayed with non-stick spray. Make gravy and pour on top, cover with foil. Bake for an hour and a half at 350°. or until dressing is done.
