Layered Spinach Salad

  • 1 1/2 Slices Bacon, crisp and crumbled
  • 5 oz. Frozen Peas
  • 1/4 Cup + 2 Tbsp. Romano cheese, grated
  • 3/4 Quart Fresh spinach, torn
  • 1 Cup Sliced mushrooms
  • 1/2 Cup Red Onion Rings
  • 1/4 Cup Mayonnaise
  • 1/4 Cup Sour cream
  • 1/2 Tsp. Sugar (optional)
  • Combine cheese and bacon and mix well. In large bowl, layer spinach, cheese mixture, mushrooms, onions and peas. Combine mayonnaise, sour cream and sugar. Mix well. Spread mayonnaise mixture over salad to seal. Sprinkle 2 tbsp. cheese overtop. Cover and refrigerate overnight. Makes 4 servings
