Salmon Burgers

  • 1 (14.75 oz) can Salmon
  • 1 Egg yolks, lightly beaten
  • 1/2 cup Onion, chopped
  • 1/2 cup Green pepper, finely chopped
  • 1/2 cup Fresh whole wheat bread crumbs
  • 1 tablespoon Lemon juice
  • 1 teaspoon Grated lemon peel
  • 1/2 teaspoon Rosemary, crushed
  • 1/8 teaspoon Black pepper
  • Drain salmon, flake. Combine ingredients. Mix well. Form into 4 or 5 patties. Pan-fry in small amount of vegetable oil until lightly browned on both sides. Serve on toasted hamburger buns. Top with favorite condiments.

    Makes 4 or 5 servings.

    Substitute egg white (or EggBeaters) for egg yolks, for low cholesterol.
