Seafood In Hard Cider

  • 3 tablespoons Olive oil
  • 4 Garlic cloves, chopped
  • 1 cups Dry Hard Cider or Smirnoff Ice
  • 2 tablespoons Tomato Concentrate
  • 5 tablespoons Flat-leaf Parsley, fresh, chopped
  • 3 pounds Seafood (Scallops, Shrimp, etc)
  • 4 cups Rice, cooked (White or Mixed)
  • »In frying pan, warm the Olive oil overmedium heat. Add the Garlic and saute for about 2 minutes or intil soft but notbrowned. Pour in the Cider and stir in the Tomato Concentrate and 2 tablespoonsof the Parsely.

    »Raise the heat to medium-high, bring to a boil and reduce to about half, then add seafood and cook until tender. DO NOT OVERCOOK OR IT WILL GET RUBBERY.

    »Prepare bed of Rice on serving plate & pour contents of Seafood mixture over Rice & serve. (Serves 4)
