Salads and Dressings

Bitter Greens W/ Slivered Apples, Walnuts & Cheddar

  • 2 1/3 tablespoons Riesling Vinegar (late harvest)
  • 6 tablespoons Walnut infused Grapeseed Oil
  • ~ Sea salt to taste
  • ~ Fresh Ground Pepper to taste
  • 4 cups Bitter Green Salad Mix
  • 1 Apple(sweet)-Gldn Del/Pink Lady
  • 1 Apple(sour)-Grny Smith/Pippin
  • 1/2 cup Toasted walnuts
  • 1 Wedge Cheddar cheese, sharp
  • HINT: Place plates in freezer to chill before preparing salads.

    DRESSING: »Whisk together Oil, Vinegar, Salt & Pepper in a small bowl.

    Thinly slice the apples and place on plate alternating sweet & sour pieces aroung bottom of plate. Placea small handful of salad mix on each then top with walnuts. Using a vegetable parer or cheese plane, shave curls of thecheese on top of each salad. Drizzle with dressing and serve Gives the taste ofa Taffy Apple even though there is no caramel or chocolate.
