Candied Grapefruit Peel

  • 3 large Thick-skinned grapefruit
  • 2 1/2 cups Sugar
  • 1 1/2 cups Water
  • ~ Granulated sugar
  • Peel grapefuit and pare off the white part inside the skin. cut the peel into even strips, about 1/4 inch wide an 3 inches long. Place strips into a saucepand and pur boiling water over them to cover. Bring to a boil again, and boil, uncovered, for 5 minutes. Drain and repeat this procedure 4 more times.

    Put 2 1/2 cups sugar and 1 1/2 cups water in a pan, bring to a boil and boil for 10 minutes; then add the grapefruit peel and simmer,lightly covered, for about one hour until nearly all the syrup has been absorbed. Remove strips with a slotted spon andarrange on a piece of aluminum foil. When they are cool and almost dry, roll them in granulated suger, let them store in a tight container.

    Orange peel can be prepared the same way, but be sure to use thick-skinned fruit.
