Salsa

  • 18 cups Tomatos, fresh, chopped
  • 4 large Onions, chopped
  • 4 large Green pepper, diced
  • 1 Jar Jalapeno pepper
  • 3/4 cups Brown sugar
  • 1 1/2 cups Vinegar
  • 1 can Tomato sauce
  • 11 1/2 tablespoons Garlic salt
  • Salt and pepper to taste. In a large kettle combine, tomatoes, Jalapenos, onions, green pepper, sugar, vinegar, garlic powder. salt and pepper. Bring to boil. Reduce heat to med-high simmer until desired thickness (about 1 to 2 hours) Add reserved pepper and onion, and tomato sauce. Cook 15 to 30 minutes longer until salsa thickens. Spoon into jars (hot) leaving 1/2 headspace. Wipe jar tops and threads clean. Place hot lids on jars. Screw firmly into place.
