Bean Dip

  • 1 cup Refried beans
  • 3/4 cup Sour cream
  • 1 tablespoons Grated onion
  • 1 tablespoons Dijon mustard
  • 1 tablespoons Lemon juice
  • ~ Salt and pepper to taste
  • Blend all ingredients and let stand foran hour or so before serving.

    Refried beans:

    Heat lard or bacon drippings in a skillet, add some minced onion and sautelightly. Then add mashed beans as prepared in the basic recipe for beans, and fru, stirring, until the beans are dry. Use ample fat for preparing refried beans.

    Refried beans can be used as a base for a variety of casserole dishes. In combination with fried chorizos; with various toppings; the can be scrambled with eggs and peppers or chilis; and of course,used as filling for tortillas, tostadasand sandwiches.
