Baked Bananas
Make a cut with a sharp knife down the length of each banana so that the skincan be removed in one piece. Carefully take the bananas out of ther skin without breaking them. Reserve the skins.
Put thebananas in a deep dish, sprinkle with sugar and pour the rum over them. Let stand for about 3 hours, turning once. Drain bananas, reserving the rum, and put them carefully back into theri skins. Tie the skins with a string so that they will not open while baking. Put bananas side by side in a buttered baking dish. Pour the rum over them and bake in a preheated 375° over for about 15 minutes. Remove the string and serve immediately.
