Beans - Basic Recipe

  • 2 cups Pinto or red beans
  • 1 1/2 qts. Water
  • ~ Salt to taste
  • 1/2 cup or more Lard
  • Soak beans overnight with water to cover. Some of the water will have been absorbed by morning - add more to cover. Addsalt and cook slowly for about 2 hours or until very tender. Mash well and add the melted hot lard gradually, while still cooking the beans. Stir while adding the lard, to prevent sticking. If available, use bacon fat instead of lard, it improves the flavor.

    If using canned beans, drain the can, mash the beans. heat 1/4 cup lard in a skillet, stir in the mashed beans and add the liquid from the can, a little at a time, until well blended.
