Marinated Shrimp With Olives And Mushrooms

  • 1 lb fesh Firm mushrooms, quartered
  • 1 cup Water
  • 1/3 cup Olive oil
  • 2/3 cup Vinegar
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic, halved
  • ~ Salt to taste
  • 1/2 tablespoons Thyme
  • 1/2 tablespoons Black peppercorns
  • Pinch Of grated nutmeg
  • Pinch Of cayenne pepper
  • 2 Bay leaves
  • 3/4 cup Pimiento-stuffed green Spanish olives
  • 2 lbs Medium shrimp, cleaned and cooked
  • Combine mushrooms, water, oil, vinegar,lemon juice and seasonings in a saucepan. Bring to a boil, cover and cook for 5minutes. Pour into a bowl, add olives and shrimp, toss and cool. Chill for a few hours or overnight before serving.

    Note: do not overcook shrimp. Put them in cold water, bring to a boil and simmer for 1 minute. Let cool in the cooking liquid.
