Mango Puree

  • 3 large Ripe mangos
  • 1 1/2 tablespoons Lemon juice
  • 1/2 cups Sugar (or to taste)
  • 2 large Ripe firm peaches
  • 4 tablespoons Light rum
  • 1 cup Heavy cream
  • 1/2 cup Slivered blanched almonds
  • Peel andslice mangoes, press through a sieve, add sugar and lemon juice, blend.Peel peaches and cut them in smallish cubes and add to mangoes. Whip cream, fold in alomonds and rum and blend with mangoes. Serve in individual cups or in pastry shells. Chill well before serving. Top each serving with a piece of fresh fruit, such as a slice of peach, or a cherry or strawberry.
