Sweet And Sour Spinach
Hard boil the eggs and cool.
Cook the spinach in water, in a large pot till thecolor darkens.
While spinach cooks, frybacon crispy and break into pieces.
Save 2 tablespoons of the bacon fat.
Drain spinach in a colander.
Bring to a boil 1cup of water, bacon fat, sugar and vinegar.
Reduce heat and stir in cornstarch.
Continue stirring till sauce thickens.
Add additional cornstarch if necessary.
Stir in bacon pieces.
Return spinach to pot.
Mix spinach and sauce in together.
Serve hot.
Garnish with hard-boiled egg slices.
Serves about 8 people.
