Chopped Chicken Livers

  • 1 lb Chicken livers
  • 2 large Onions, chopped
  • 4 t tablespoons Chicken fat
  • 4 Egg yolks, hard-boiled
  • 1 small Clove garlic, minced
  • ~ Salt and pepper to taste
  • Wash livers in cold water, pat dry and broil for about 4 minutes until browned on both sides. Saute onions and garlic in chicken fat until just lightly browned. Grind livers, onions and egg yolks, blend in fat left from frying onions; season with salt and pepper.
