Herring Salad

  • 1 large Salt herring
  • 3 Hard-biled egg yolks
  • 3 tablespoons Oil
  • 2 tablespoons Mild vinegar
  • 1 tablespoons Sugar
  • 1 tablespoons Prepared mustard
  • 4 tablespoons Minced onion
  • 2 cups Cooked diced potatoes
  • 2 cups Firm apples, peeled and cubed
  • 1/4 cup Grated carrot
  • 1/2 tablespoons Crushed caraway seed
  • Soak herring overnight in cold water, drain, skin, filet and chop. If herring has any milt or roe, press through a sieve along with egg yolks. Blend oil, vinegar, sugar and mustard. When smooth, mix in egg yolks, onion, potatoes, apples, carrot, caraway and herring. Let stand for a few hours, then add more seasoning and vinegar if desired.
