Herring Salad
Soak herring overnight in cold water, drain, skin, filet and chop. If herring has any milt or roe, press through a sieve along with egg yolks. Blend oil, vinegar, sugar and mustard. When smooth, mix in egg yolks, onion, potatoes, apples, carrot, caraway and herring. Let stand for a few hours, then add more seasoning and vinegar if desired.
